If this book leaves out the 1000 chemicals in our food, water, air and soil that is not allowed in Europe, for instance, and the bad recommendations by the government about what is considered as healthy food such as saturated vs unsaturated fat, or the war against beef, egg and milk vs organic of the same and the problem of depleted soil for not cultivating a regenerative agriculture, and of course the tremendous amount and ever increasing vaccinations to keep us healthy (?), then this book does not see the elephant in the room! We can eat everything what our ancestors ate, but it has to be grown or produced the same way, uncontaminated and produced unaltered, which is practically impossible if produced by big agriculture and the corporate food industry. We all should start looking into producing our food responsibly. If more of us would be involved with growing our own food, not only the healthier regenerative methods could be used widespread and allowing organic food to compete with the corporations, but it would also result in a surge as a new economical revival for those people who got impoverished as a result of de-industrialization that took place in the last couple of decades.
You cannot compare the homogenous Japanese society to the ethnic soup that is the USA anymore than you can compare it to the Mediterranean region, the Scandinavian region, etc. They are not comparable except as apples and oranges and so are one-size-fits-all dietary solutions for general health.
